The miracle of egg-whites, clear and slimy, whipped into frothy clouds. Soft peaks, like Baby’s Breath. Mixed with sugar, tiny bubbles form, then crackle and pop. As the heat finds the sugar, it begins to brown, turning a rich golden colour in seconds.
